Carcinogenic Substances in Fast Foods
Fast food can do more than add to your waistline. Many fast food offerings contain carcinogens that contribute to different types of cancer. In addition, fast food can contribute to cancer in indirect ways.
There has long been concern that meats and other foods cooked at very high temperatures can form carcinogens. According to Science Daily, heterocyclic amines are carcinogens that are formed when meats are cooked at high temperatures. Various studies looked at food such as beef hamburgers, pork ribs and steaks.
According to the National Cancer Institute at the National Institutes of Health, carcinogens can be formed when meat is pan fried or grilled over an open flame, which often occurs in fast food restaurants. The types of cancer that may be more likely to occur include breast, colon, lung, prostate and liver cancer.
Acrylamide is a carcinogen that has been found in fast food. According to the Center for Science in the Public Interest, this has been found in extremely high levels in French fries, which are a staple of fast food restaurants. Thirty-nine to eighty-two micrograms of acrylamide have been found in French fries.
There are many ways that fast food indirectly contributes to higher levels of cancer. According to the Rhode Island Cancer Council, Inc., low fat and high fiber diets reduce the risk of cancer. Since a great deal of fast food is high in fat, this may instead increase a person’s risk of developing cancer. When people spend their calories on fast food, they will consume less of the food items that lower the risk of cancer such as fresh fruits and vegetables. Of course some of these are available at fast food restaurants, however a great amount of the fast food that people consume is laden with calories, saturated fat and sodium.
BBC News states it simply by saying “Fast food is a recipe for cancer.” Professor Paul Kleihues, director of the WHO International Agency for Research on Cancer, says that even a child can increase his or her risk of cancer in future years by how he or she eats. Fast food with a lot of calories should be avoided.
